The Devil You Say?

In the comments of my last post, several of you mentioned eating oodles of eggs so I thought I'd post my favorite recipe for deviled eggs.

Deviled eggs Conda style:

Take a dozen hard boiled eggs, cut in half, and remove the yolks. In a large bowl, place the yolks, a half cup of mayo (fat free works), a tablespoon or two of any mustard you like and...my secret ingredient, a tablespoon or two of curry spice. Blend well until smooth, then spoon into the egg halves. Sprinkle with paprika or chili powder.

Eggs are healthy, so eat! Good brain food for being creative!

Yummy! I love them with humuus mixed with the yolk, too, though haven't used curry spice with that combo--but might try it! Cynthia

I think my mother mixed pickle relish with hers. Thanks for the reminder - I love deviled eggs, but never make them. I'm not sure why!

Beth--I'll bet they're good that way, but I've never had them with pickle relish--my dad loved anything pickled, except relish!

Just returned from caring for my very anemic mother-in-law. Made deviled eggs for her, because they're rich in iron, and yummy. Your recipe sounds terrific.

I so wish I could still eat eggs. I really miss them. Once in a while I break down and have a few eggs whites, but I suffer afterwards.

Take my word for it, good food is nothing to take for granted.

I haven't made deviled eggs in a long time, but I use less mayo, mustard, some Tabasco or chopped jalapeno, and top with fresh or dried dill weed.

Carol--yours sound spicy hot, just the way I like them (and yes, many people prefer less mayo, I'm a mayo nut).

I love eggs, but for some reason I've never made deviled eggs. I'm going to try this recipe. There's a Hell Night where I live - everything is spicy. They do a Russian roulette deviled egg. Each egg has varying degrees of heat, and everyone has to get one!
