Happy Valentine's Day...

 
A rose for all my friends.
For some of you, my faithful fellow bloggers, this post will come a bit early. For some it will be "on the day." Whichever, here's a yummy, full of brain helping anti-oxidants, recipe to wish you all a

HAPPY VALENTINES DAY
Chocolate Walnut Shortbread:
1/2 c. walnuts
1 c. white flour
1 stick unsalted butter, or baking margarine, room temperature, plus more for pan
1/2 c. chocolate bits (mini baking choc. bits work best, but any chocolate is great)
1/4 c. powdered sugar
1 teas. vanilla

Preheat oven to 325. Pulse walnuts in grinder until finely ground. Transfer to bowl, add flour & stir thoroughly. Beat butter, sugar and vanilla until light and fluffy, add flour mix and beat until combined. Stir in chocolate bits. Butter 8 inch round cake pan, place dough in pan, cover with plastic wrap and press until dough is spread evenly in pan. Cut with sharp knife into eight wedges, prick all over with fork. Bake until golden and firm in center, 30-35 minutes. Recut into wedges and prick again. 

Can eat when slightly cooled. EAT!

Aubrie--I'd add a half cup of flour and try it that way--though I've never tried it. How about different nuts, or do you not like any nuts? Hey, the recipe might be very tasty with peanuts...

peanuts are okay, but I don't like nuts in my desserts or in my bread. I'm not sure why?

A total of 263 pieces sent out (244 poems and 19 stories). Three rejections so far and one poem accepted. It's such a lottery since most sites only accept like 2% of items submitted.

Swu, I know you always treat your Queen right every day of the year--and probably twice on Valentines Day!

Jim! Good heavens! I agree with Kathy, you are incredible. And did you know the AVERAGE for submissions until success is 200!?

@Kathy – No, I’m just a guy with a very sore neck and RSI.

@Conda – Then I’m not doing too bad. Out of the last 422 submissions I had 38 pieces accepted.

Jim--that is impressive, especially as how some of those acceptances were poems, the hardest to sell.
